Try publications by Morton Barlaz at North Carolina State University.
He did a lot of great work on the energy content of various substrates
when used for biogas production via anaerobic digestion, and those
results may be transferable to the aerobic composting process.

Hi all,
Does anyone have, or know where to find, calorific values for typical
compost substrates such as yard waste, biosolids, food waste,
agricultural wastes etc? I am interested in calculating theoretical
maximum temperature generation figures for a range of compost mixtures.
