[USCC] Fermentation of food waste

If you are successfully but unintentionally fermenting the food waste, why  
do you then want to compost it?  We ferment fish offal, poultry byproducts  of 
various kinds, and other organic ingredients into a sought after liquid  
fertilizer.
 
It is not labor intensive, nor does it require the square footage or  
equipment in typical composing sites of similar size.  Plus once the  organic 
material enters the grinder it is controlled for odors and leaves the  system sterile.
