Dave,
You are right to point out that there is no direct evidence that composting may or may not destroy prions. However, prions are proteinaceous infactious particles. These could be destroyed in composting by enzymes and organisms utilizing protein as a food source. To my knowledge this has been demonstrated to a limited extent in laboratory studies in the US and England.
