Definitely. Fresh blood that did not pass the process may contain pathogens 
and the equipment may cross contaminate the hygienyzed already product.

Yes, best if it is done in vessel.

Very frequently, every 15 minutes if you want it be fast and hot.

If there is lots of air - no smell. Blood composts very quickly and hot.
