As several have pointed out, food waste is particularly prone to excess
moisture and fermentation conditions. Rotating drum systems have the
capacity to help overcome those conditions by constant mixing and
aeration. When I have noticed acid-sour aromas in drum systems, it
usually seems to be due to overloading the drums. If they are much more
than half full, the center core of material does not get properly
tumbled and aerated even if there is a blower system to facilitate the
aeration.
